Roasted Beet & Honey Goat Cheese Dip

Sorry, I had to! You would have, too, right?! I can't talk about beets and not think of Dwight Schrute! Although, to be honest, I wasn't always as enthusiastic about them as Dwight. I didn't try them for most of my life because I didn't think I'd like them. Turns out, I do! It only took me 32 years to get here, you guys, but I did it. I equally love all things goat cheese, especially Montchevre® Flavored Goat Cheese Logs. They are smooth and creamy, with that clean tangy flavor! Several of my go-to recipes include goat cheese, like bacon-wrapped dates stuffed with goat cheese in the fall and delicious omelets full of caramelized onions, goat cheese, butternut squash, and thyme in the winter.

This recipe here combines balsamic-roasted beets with a smooth Montchevre® Honey Goat Cheese Log for the perfect earthy, yet sweet dip. Plus, can you even get over that pink color?! It's beautiful!

Serve it up with toasted baguette slices at your next gathering, and I'm confident it'll be a hit!

Roasted Beet & Goat Cheese Dip

Ingredients:

3 medium to large beets

7 oz. Montchevre® Honey goat cheese log

2 tbsp Lemon juice

3 tbsp balsamic vinegar

2 tbsp cream cheese

Salt and pepper to taste

1 baguette

Fresh basil for garnish

Directions:

Preheat oven to 400 degrees. Line baking sheet with foil. Wash and trim greens beets. Drizzle with balsamic vinegar. Salt and pepper.

Bake for 40 minutes. You should be able to poke them with a fork when they're done. Remove from oven and let cool. Once cool enough to handle, remove skin.

If planning to eat this dip right away, go ahead and slice/toast your baguette while your oven is still hot from the beets!

Combine Montchevre® Honey goat cheese log(s), roasted beets, lemon juice, cream cheese, and salt/pepper to taste in a food processor or blender. Blend until smooth.

Garnish with extra goat cheese and fresh basil. Mmmmmmmmm. Enjoy!
