Homemade Honey Granola
This whole quarantine thing has got me on a big homemade granola kick. (Especially when eaten with chia pudding.) It’s so easy to make and your house will smell amazing while it’s baking.
Hopefully you already have the ingredients on hand so you can start making yours right now.
INGREDIENTS:
2 c. rolled oats
1/2 c. shredded coconut
1/2 c. chopped pecans
2 tsp. cinnamon
Dash of salt
1/4 c. honey
1/4 c. coconut oil
Splash of vanilla
DIRECTIONS:
Preheat oven to 300°. Line a baking sheet with parchment paper and set aside.
Combine oatmeal, shredded coconut, chopped pecans, cinnamon and salt in a large mixing bowl. Mix well to distribute the cinnamon.
In a heat-safe dish, melt and mix the honey, coconut oil and vanilla just enough so that it’s easy to stir together into one liquid. Pour over dry mixture and stir to combine.
Once mixed together, pour the granola mixture onto the baking sheet and gently spread it out with a spatula.
Bake for 25-30 minutes, giving it a good stir at the halfway mark.
Do not overbake! The granola will not cluster together and get crunchy until it has cooled completely. Crunchy granola is not a result of baking it to a crisp, lol!
Let cool completely. Store in an airtight container. Enjoy as a bowl of cereal, on its own, or on top of my favorite chia pudding recipe. :)
